  1. 750 g Pork belly
  2. 250 ml Water
  3. 3 tsp 5 Spice
  4. 1 tsp Salt
  5. 1 tsp Sugar

  8. 3 Garlic cloves (minced)

  1. Get your pork belly and remove any bones. Cut into pieces so it will fit in the pressure cooker
  2. Add the ingredients to the pressure cooker and mix well. Place the pork belly in the pressure cooker.

    Set the pressure cooker to 15 mins on high pressure with natural release of the pressure. (Should take around 15 mins).
  3. Once the pressure has finished releasing remove the pork belly carefully and allow to cool slightly. Once cooled, either using a meat tenderiser, or a fork (which I used), poke lots of holes in the skin everywhere. This is to help extract moisture, giving a crispier skin
  4. Once fully cooled, add a lot of salt to the top (a few mm high), and put in the fridge. This will help to extract the moisture. Keep in the fridge a minimum of 3 hours, preferably overnight.
  5. Once finished in the fridge, remove and wipe all the the salt and moisture off the skin and wrap foil around the meaty part, leaving the skin exposed
  6. Put in an AirFryer (or grill) and crisp the skin using that method. It was around 20mins at 200 degrees C in my AirFryer.

    Be sure to keep checking on the pork belly while crisping as it can turn from being just right to being burnt quite quickly!
  7. Chop and serve! (See note above regarding cutting). I served with an asian crunchy salad (Wom Bok etc) with a seasame dressing
