  1. Saute veggies in olive oil till soft. (I used the insides of the zucchini for stuffed zucchini boats.)

  2. Add in garlic, rice or Quinoa and oregano, saute 1 minute more.

  3. Add in water and bring to a boil. Turn off heat and cover and let sit till most all water is absorbed. If substituting with quinoa reduce to a low simmer and stir occasionally until liquid is completely absorbed.
  4. Stir in Parmesan cheese and extra seasoning if desired serve.
  5. Enjoy as a main dish or side with fish, Pork chops, steak or chicken!
